Caramelized vanilla slice with raspberries

Method: 

Preheat the oven to 200°C (thermostat 7).

Place the puff pastry between 2 baking trays and bake in the oven for 15 to 20 minutes until golden.

Remove from oven and immediately press on the top tray to flatten the pastry. Set the oven to broil.

Cut the pastry into 8 rectangles. Dust with 20 g icing sugar then return to the oven until caramelized. Remove from oven and leave to cool.

Cut open the vanilla pod and scrape out the seeds.

Whip the cream, adding 30 g of icing sugar Beghin Say and the vanilla seeds. Once the whipped cream is stiff pour it into a piping bag.

Place the whipped cream in the centre of 4 pastry rectangles then add the raspberries around the edge.

Finish the vanilla slices by placing the 4 other pastry rectangles on top. Place a spatula across each slice and dust with icing sugar Beghin Say to decorate.
